Chef Rochat, with three Michelin stars, was known for his role at the prestigious restaurant at the Hôtel de Ville in Crissier. This delicacy is the result of a collaboration between Chef Rochat and Master Cheese Maker Fabien Vallélian of Mafondue.ch.
