The French dairy industry is a pillar of the food sector, combining artisanal traditions and industrial excellence.
In 2025, 44,242 farms were producing cow's milk, with an average of 72 cows per farm, for a total of 23 billion litres collected each year.
France has 740 processing sites, including 9 in the overseas departments and territories, generating a total turnover of $47.3 billion for all dairy products.
Goat's milk and sheep's milk production amounts to 500 million and 290 million litres respectively, contributing to the diversity and richness of the French offering.

The European and global market
France is part of a strong European dairy industry, where 19 million dairy cows produce 155 million tonnes of milk, 94% of which is collected for processing. Germany is the leading European producer, closely followed by France and Poland. In Europe, production is distributed as follows:
- 22,200 kT of packaged milk
- 7,800 kT of fermented milk
- 2,300 kT of butter
- 2,100 kT of milk powder
- 10,500 kT of cheese
- 2,400 kT of cream
Globally, 964 million tonnes of milk are produced each year:
- 81% cow's milk
- 15% buffalo milk
- 2% goat's milk
- 1% sheep's milk
Production is distributed as follows: Europe (227 million tonnes), Asia (280 million tonnes), Africa (43 million tonnes), North and Central America (133 million tonnes), South America (69 million tonnes), Oceania (30 million tonnes). International trade accounts for 9% of milk produced, with the European Union, New Zealand and the United States among the main exporters.
